Fast and healthy fried rice

|1 Bowl cooked rice (for 2 people)|50gram diced bacon (1,7oz)|1 Fermented paprika (optional) chopped into cubes|30 gram Shitake mushroom (optional) (1 oz) chopped into cubes|1 Green onion for garnish|1 Clove garlic minced|2 eggs|1 tablespoon soy sauce|Salt to taste
|Any kind of white or brown rice will do. Just be sure that it is cooked (I always cook mine in arice cooker) and thoroughly chilled (in a sealed container in the refrigerator) before adding it toyour hot skillet. Freshly-cooked rice will not work well in this recipe. You can also use leftoverrice, be sure to keep it in the refrigerator.|Heat 1 tablespoon of the cooking oil in a skillet in medium high heat |Add the eggs and scramble until fully cooked|Remove them from the pan and set aside.|Add 1 tablespoon cooking oil into the pan then add chopped garlic and stir for 1 min, add dicedbacon and stir for 1 more minute. |When the bacon turns light brown color, add shitakemushroom, chopped paprika and stir for 2 minutes.
