|1 ¼ cups of boiled water|1 cup uncooked couscous|1 teaspoon fresh lemon juice|2 teaspoons olive oil|1 teaspoon coconut oil|3 tablespoons chopped shallots|4 (6-ounce) salmon fillets (about 1 inch thick)|1/8 teaspoon salt|chopped paprika|1/2 tablespoon dried cranberries (optional)|pepper for taste|A bunch of fresh coriander leaves (chopped)‰

Mix couscous with salt in a bowl
Pour 1 1/4 cups of boiled water to into the bowl, enough to cover the couscous.
Cover, let stand 5 minutes. While resting, the couscous will absorb the water
|Mix olive oil with pepper, 1/2 koriander, lemon juice
Pour the juice into the cooked couscous bowl and stir
|Heat a small saucepan over medium-high heat.
Add coconut oil.
Add salmon and bake for 3 min each side.
Add shallots and dried cranberries; cook 2 minutes, stir occasionally
Sprinke salt and pepper to taste

Serve couscous on a plate, top with baked salmon and the rest of the coriander
