|8 oz. pasta|2 Tbsp. extra virgin olive oil|1 lb. ground beef|1 tsp. garlic powder|8 oz. shredded sharp cheddar cheese|2 carrots chopped|2 tomatoes chopped|Veggies of choice : frozen corns and green peas‰
|Cook the pasta per the instructions on the box in a large pot of boiling salted water until just al dente.
Then drain
|While the pasta cooks heat the oil in a large cast-iron skillet over medium heat.
Add the ground beef and season with garlic powder, and some salt and pepper, and cook, breaking apart with a wooden spoon until the beef is cooked for 5 to 7 minutes.
|Add chopped tomatoes, cook for 5 minutes, reducing the heat as needed, for 15 minutes. Then add corns and green peas
Taste and adjust the seasonings to your liking.
|Add the cooked pasta along with one-quarter (about 1/2 cup) of the cheese to the sauce and stir to combine. Sprinkle the remaining cheese on top and bake in the oven until the cheese has melted and the sauce is gently bubbling about 15 minutes. Let cool for a full ten minutes. Serve with a side salad and crusty bread
