Chia Seed Parfait with Mixed Berries

|1/4 cup chia seeds|1 cup almond milk (or any milk of your choice)|1-2 tablespoons honey or maple syrup (optional)|1 teaspoon vanilla extract|1 cup mixed berries (strawberries, blueberries, raspberries)|1/2 cup granola
|In a bowl, mix chia seeds, almond milk, honey or maple syrup, and vanilla extract. Stir well.|Let the mixture sit for at least 2 hours or overnight in the refrigerator to thicken.|Once the chia pudding is set, layer it in a glass or jar starting with a layer of chia pudding, followed by a layer of mixed berries, and then a layer of granola.|Repeat the layers until the glass or jar is filled.|Top with a few extra berries. Serve immediately or store in the fridge for up to 2 days.
